Welcome to our channel! You will only find easy, delicious plant-based recipes here! My mom and I have cooked plant-based food together for decades. She is a lightning bolt of energy and an absolute riot. I never know what she'll be up to before we begin.

Banana Cake with Banana Frosting and Chocolate Drizzle
Banana Cake
Ingredients:
1 ½ cups oat flour
½ cup almond flour
1 teaspoon baking powder
½ teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
3 ripe, leopard-spotted bananas
½ cup maple syrup
1 tablespoon vanilla
1 tablespoon apple cider vinegar
Instructions:
In a mixing bowl, combine the flours, baking powder, baking soda and spices. In a separate bowl mix the bananas, maple syrup, vanilla and vinegar. Stir and smoosh until well combined. Pour the liquid ingredients into the dry ingredient and stir well. Add to a parchment paper lined pan (9x9 -inch works well). Bake at 400 for 30minutes or until the center of the cake is baked and not liquid-y.
Cool and frost with Banana Frosting and Chocolate Drizzle, below.
Banana Frosting with Chocolate Drizzle
Ingredients:
1 block SILKEN firm tofu, well pressed or wrapped in kitchen clothes overnight.
1 ripe, leopard-spotted banana
1/3 cup maple syrup
1 teaspoon vanilla
¼ cup Enjoy Life chocolate chips
Instructions:
To a food-processor or high speed blender, add the tofu, banana, maple syrup and vanilla. Blend until smooth with no visible chunks.
Frost cake with Banana Frosting then add chocolate drizzle, if desired
In a small microwave-safe bowl, add chocolate chip and 1 teaspoon water. Microwave until the chips look melty - stir and stir until the melted chocolate is shiny and smooth. Use a spoon to drizzle lines of chocolate over the Banana Frosting.

Thanks for this recipe! I made it today because I had everything; bananas I needed to use, silken tofu and even Enjoy Life chocolate chips. It turned out great! I didn’t let the silken tofu drain long enough so I compensated by only putting 1 tablespoon of maple syrup in the frosting. It tasted sweet enough for me and was really good! I also cut the maple syrup in the cake by half and that was also plenty sweet (for me, I know people like different levels of sweet). The chocolate drizzle was a fantastic addition to this cake! I love your Plant-based Woman Warrior cookbook, especially the hummus recipe (including the variations) and the entire sauce/dressings section! Thanks you both for all you do for the plant-based community!

Yummy yummy! Love me some bananas and chocolate. Will try this soon! And yes, the vinegar will activate the baking soda to make carbon dioxide gas, which causes the rising by forming air bubbles (because vinegar is an acid and the baking soda is an alkali or base). Baking powder, on the other hand, already has the acid and base in one product, so all it needs is a liquid to get it going. Moral of story: Use baking powder when your recipe has no acid in it. :)

Well I made Anne's pasta tonight and it was delicious! I picked from my organic garden, raided the pantry and shopped for all the remaining items for all three recipes. Thank you for the encouragement. I have been trying to eat plant based and have been unsuccessful. This meal was easy peezy! Great ideas in the video Anne! I wish I could post my picture so you could see it! It was beautiful!

Made this tonight and it’s delicious! Thanks for sharing.first time having water chestnuts. By the way had no tomatoes so I used a can of mild rotel tomatoes and I used red onions . Delicious
Instead of adding water chestnuts from a can, for the crunch, how about adding fresh jícama chopped up? Just as crunchy, or even more, and goes with the whole "México" vibe!
I used balsamic glaze and lime juice it was delicious!

Sweet hot mustard dressing is fantastic! I used soy milk and added tumeric powder and freshly grounded black pepper.
